I have been spoiled by cPanel/WHM. Is there anything out there that does a good job at managing a single website with a few subdomains and maybe another domain? I love all of the great tools on my webhisting servers and would love to keep that on these one off servers.

I'll recommend two panels that I have used and find capable:

and

ISPConfig: http://www.ispconfig.org/ispconfig-3/

They're both impressive and are worth looking at.

I use Kloxo. Used to have cPanel. Haven't missed cPanel yet since using Kloxo.

Yes, I use Kloxo on all of my servers, two dedicated and two vpses. So far so good. Kloxo has got a script installer now, too. Just noticed it because usually I add Installatron (free one-domain edition).

Kloxo had some issues are 6 months ago, some large exploits, but they've since been fixed and it's a decent control panel.

I just found out that I can get an unlimited licence for Kloxo. Free, of course.
