Depends on who you talk to, the term 'cloud' has several meanings. Most of which is just 'hype'
You could start here:

Then find alternate definitions, and alternate things, cloud hosting, cloud storage, etc...

In brief it is a networking model of producing and delivering and computer resources. Those resources are delivered from highly available and scalable computer infrastructures. Some say that Cloud computing resources must be delivered on software as a services model, something which is not a must. Go to WHT Wiki section to learn more about it. I also suggest you to learn something about virtualization.
