While I personally can't stand Windows for servers, my stance on the issue is "use what you're comfortable with". If you learn to secure, update, and firewall Windows servers and are completely clueless at the care+feeding required with Linux servers, you are in no way more secure by running Linux.
In my humble opinion (and I have no stats or facts to back this up, so take it with a grain of salt) Linux/Unix servers run by clueless admins make just as many headaches on the internet as Windows servers run by clueless admins - remember we're discounting the malware caused by client machines, which far eclipses the damage caused by all forms of servers.
As far as banks and other companies, I'm not sure about this... I believe it's because when they pay Microsoft for a full product, they have someone on the hook commercially to support it. Even with, for example, RHEL, I don't think Redhat put themselves on the line the way Microsoft do because at the end of the day it's just commercial support for free software. In order to get a full product, you have to hit up several different vendors - Microsoft offer the OS, the database, the communications software, etc. I think that is more attractive to these kinds of entities than any security record.I used to run the oldest commercial Mumble host.

for hosting niche, its kind of better, it uses less resources and php/mysql/perl/apache runs better on it.

100% Linux, unless you need something coded specifically for windows. Such as ASP... If its not coded specifically for windows, just go Linux and avoid the headaches.

Well each have their place. There's folks who develop on windows specifically for windows. You can't sell those folks a linux hosting account.
To please all types, you need to provide both platforms. Windows server 2003 is pretty damn good actually. If you are thinking one or the other, then you haven't identified your target market.

Most people choose linux as its cheaper to run and more people PHP/mySQL, although windows hosting can run those too. If you don't need asp.net or mssql, I recommend choosing linux hosting.

Unless you need something lke ASP Linux is the way to go 100%.
Personally I hate windows server. I have had no end of trouble with it in the past! I have also found it needs rebooting like every couple of days!

I don't have any problems with Linux. I hate windows anyway. Im a mac Guy.

Windows is aimed at a non-technical crowd, or at big businesses/government who need to be able to hold somebody accountable for problems in the OS/their environment to manage their own liability.
*nix is preferred by technical users and small-medium businesses who need cost-effectiveness and efficiency over accountability.
Of course, this is just how I see it . . . many exceptions to those rules outlined above.
