DNS Zones in WHM
I am looking to redirect all web & email services over to a new Server.
Is the best approach to simply repoint the main A record to the new Server IP and this will redirect the traffic? then, i will update the nameservers at the registrar to point to the new server.

That should be fine. However if you have time prior to the move you should lower the TTL to 300 or so a few days before hand. This will ensure propagation takes MUCH less time and ensure a much faster changeover.
Yes this should work. You will need to wait for DNS propagation (24-48hrs) when you change the A & MX records. Once propagated, you then would update the Name Servers. Just be sure all the DNS records exist on the new server first!
Normally DNS prorogation of 24-48 hours looks good in support tickets
The time frame is max 4-5 hours.
A nice little tip if you're moving websites from one server to another and want to force changes before propagation, is to create some iptables forwarding rules:
Be sure to modify this to accomodate the correct interfaces, and naturally include the new IP you'd like to forward. Change ports as applicable for different services.
iptables -A FORWARD -i eth0 -o eth0 -j ACCEPT
iptables -t nat -A PREROUTING -p tcp --dport 80 -i eth0 -j DNAT --to NEW IP
iptables -t nat -A POSTROUTING -o eth0 -j MASQUERADE
echo 1 > /proc/sys/net/ipv4/ip_forward
