Dovecot or Courier?
I need to determine which mail server is better so i can know what to install as default on future servers.Post your experience with them.
i vote for dovecot, fast reliable and stable.
also, the documentation is very good.

Dovecot. It's more modern, better docs and there is plenty of support (although I don't know that it could compete with Courier for installed base!) We've been using Dovecot for a few years now on shared hosting systems and it just works.
If you're using a clustered file system (such as nfs), I'd edge towards courier, otherwise, dovecot is great for single server installations.
dovecot will be a good choice if you have cpanel based server.

I don't have cpanel based system.Also,i read how dovecot have problem with automatic emptying trash.Can that problem be resolved ?
My vote goes to Dovecot its more secure, faster and has much features.
Dovecot is faster than Courier from my experiences. One example of plugins I like is built-in sieve filtering support.
Having severs with customer data on it without proper monitoring is like having one night stand without using protections - eventually, there will be an 'oh s**t!' moment.
If you have lots of accounts on the server I would suggest for dovecot because overall memory usage is lower than courier. Otherwise courier because it is supposed to be more reliable,
dovecot would be easier than courier
