Just wanted to know if it is possible to setup some kind of cron task so website stats in cpanel are emailed each week?

This is definitely possible, just a matter of coding a script to pull data from the website stats and either PDF it or just email it to your clients weekly.

I'm using Awstats which is built into my shared cpanel hosting.
