Same prospect as anywhere else. Folks in NZ need web hosting. You supply web hosting. The market maybe a lot smaller than the USA, but there are fewer competitors in NZ. Targeting local markets with web hosting is an excellent strategy and you can get more $$$$$ for your services.

I'd try to find a way to have the servers in New Zealand (or near by). Otherwise you're just like any other web hosting company in the states (which there are a lot of).
Someone in New Zealand (who's smart) will appreciate a local hoster, because the latency will be much less. Which is appreciated when you're using your host to develop web apps, or if you're vistors will be local.

1.00 United States Dollar = 2.13220 New Zealand Dollars
as of right at this moment
(ie 46c in the US dollar)
There's a market for the Kiwi's I think - you don't see a lot of NZ based hosts really. Aiming at the NZ'ers though with the exchange rate the way it is may prove to be less appealing than the US market though.
Then again, if you nail the idea down tight, the extra signups will offset the lower rates you should be charging.

If you're targeting the NZ market, I'd look to first get a reseller account from a provider with servers in NZ. Then get some dedicateds or maybe colo your own servers in NZ. Steve [dotcomnz] has reseller accounts on offer. Not sure if their servers are NZ based or USA based.
