Both servers are very powerful. Personally, I would go with Single Quad Core Xeon X5355 because I can add a second CPU later. If you don't need this, you should go with Dual Xeon 5160.
However, what is your old server? and what kind of your sites? please give some info so that we can let you know its sufficient or not!
