What to use to recieve payments if selling items that i have a limited quantity of? as in if someone was to buy the last item i have no one else could buy anymore and the buy button would be replaced by "out of stock" or something like that

Most reasonable shopping cart software has the functionality you are asking for. OScommerce should be able to handle this.
