I have similar feelings about their support, so your not alone.
I am not to fond of there Web Statistics and have no clue if they could be saved to a spreadsheet.
If 1and1 gives you access to your access logs, you could perhaps download them once per day and use the information however you would like. In addition to downloading your logs, you could also install something like awstats to generate your statistics. awstats produces very useful statistical data and by using it, you might find you don't even need a spreadsheet.
It's a very good stats program that wont tax your server and it keeps years worth of records. We've found it to be a valuable tool. From analytics you can export to just about any format you would like, as well.
