You need a certain level of trust in the world and in companies so you're not living a completely paranoid life. If you don't believe the ICQ chat to be secure... don't use it. If you think that Lypha wouldn't keep on top of removing access and changing passwords for things before and after they fire somebody, don't host with them.
It's as simple as that, really. If you're having to question the security of your host and are more convinced that their support is compromised than it is secure, it's time to move on.
Well, I think it's safe to be concerned about certain things. Trust has to be earned. As far as support systems go, I do think it's good to offer a variety of different ways a client can contact you. Email obviously, ticket system, forums, live chat, phone and if someone wants to add irc, maybe they have a few people that prefer that. I think it's more important to offer ways that the client will feel comfortable and by offering a few different avenues satisfies a variety of clients.
