I am reconfiging a dedicated box to Windows 2003 Server and will be doing the management of it even though I am certainly not an admin. If I have 3 or 4 websites (only 1 with major activity) will Plesk be of help to me?

It depends...

If the sites are just for you, you dont need plesk.

You can use remote desktop to do pretty much everything.

It is just for a single client who has 3 websites with one of them being higher usage.
