How many customers in each server?

This thread is not going to give you any useful information.
Some people are using a Celeron 1.8Ghz machine, others are using Dual Opterons with 2GB of ram. All accounts are not created equal and the mix of accounts will make the number per server vary quite a bit. Something as simple as PHP or not can greatly vary the results that a certain host will have for a certain server.
It'd be like me posting a poll of: How many people do you fit in a room?

As already pointed out it depends on the server itself and resources each account will use.

I 4th it. There's no real way of knowing. Depends on what you have and what you sell. Also, it depends on what they use. But, I would go on more of what you have and sell.

I've seen servers serving plain html pages hold thousands.
I've seen servers serving cold fusion pages crap out at 50.
There are just too many factors for a plain # to tell you anything relevant.
Is the server the database and e-mail servers as well, or just serving pages? What's supported? ColdFusion? .NET? What kinds of clients do you have? All dynamic sites? gig databases? How much resources are you giving your clients? Are you moving troubled sites with bad scripts to "bad boy" boxes or leaving them on the server?
Since you didn't specify any of these, I'll just go with:
372.713 sites per box.
