Well, I can't predict the future and tell you any of these will be around in 5 years. I expect that many of them will. All payment processors have had problems. You will always find good and bad feedback about any company.
Your best bet is to determine your needs, investigate which companies off those requirements, then do your homework. Search for feedback on each company. Check BBB records. Talk with colleagues that have used some of the companies, etc.
As for secure, I'm not sure exactly what you are looking for. As financial institutions, they need to take certain precautions with user data and transaction processing. What they do will vary from vendor to vendor.
I wouldn't trust PaySystems personally, after what they did to their old customers of the third party processor they offered. And PayPal you will find mixed comments... Some will say it's great, some will say it's too easy for the buyer to get their money back and keep what they purchased and some will say it's too easy for the seller to charge you and not deliver anything. It really depends on what you're selling. If you're selling web hosting, you *should* be safe. Moneybookers and e-gold I can't talk for. PSI Gate and Internet Secure both have good reviews but again I've never used them. Authorize.NET is used by one of our partners and they have had very few problems aside from the downtime some months back. ProTX and WorldPay I use and have never had problems. I used to use 2CheckOut without any big problems, occasionally a late cheque...
It depends on what you might be looking to do? And what country you are in? And your monthly volume?
For example, in the above, most allow you to accept credit cards but using all those companies would be overkill. CCBill is primarily for adult merchants as well. Their discount rate is higher than most.
Authorize.net / protx.com / internetsecure (for example) are electronic payment gateways. They are not a MAP (merchant account provider).
Paypal / 2Checkout / Moneybookers (for example) are examples of a third party processors. They basically have a merchant account and allow you to use their merchant account to accept credit cards.
For stability, a merchant account is usually the best pick. Make sure it is using an acquiring bank that is well known and stable as well.
Correct Plexi, because they do not want to be considered a 3PP in the eyes of Visa / MasterCard. It is all in the wording. Sometimes the words can also determine whether or not one is even accepted for a merchant account and an electronic payment gateway (Verisign's Payflow being another electronic payment gateway).

If you'll go through the review of all listed companies you always find both good and bad review of each company. I personally think that every company is good; they are in business, just probably they're missing few things. While selecting "the best" you should go through the details & average real reviews and should check their track record, as svdorr, rightly said you should also talk to your colleagues, the word of mouth can help you to choose the most reliable one suitable to your need.
However eventually it also depends upon your location and how much you might be needed to process.
One other method of payment that you may want to consider, beyond getting your own merchant account, is to consider E-Check/EFT processing.
This is a method of payment processing that is even less expensive than credit cards and has lower rates & fees. The only downside is that it is usually not a real-time authorization so there is still a chance that a payment won't clear and you will not know until 4-6 business days later.
The good news is that virtually all gateways support EFT processing and have a designated company that they work with for it so once you get your merchant account & credit card processing setup, that might be a useful second step.
