Customer wants to supply their own Windows license..
What steps do you take to make sure its authentic?

The only thing I can think of is
a) Google the Lincense #, and if it pops up on 20,000 sites, its not authentic...
b) call microsoft and ask.

To be fair, if a customer provides the license key for you to use, all responsibility for it being legitimate is out of your hands (you arent expected to check it out). Provided you keep proof of the fact it was the customer who gave you the key for his server, then any problems caused by it being invalid would be on his doorstep, and not yours.

It is ALWAYS better to be safe than sorry..
