It is more relavent to say how many posts/day and how many views/day - A forum uses a lot of Database resources, and in order to understand the amount of resources that your forum needs, You need to understand the site visitors.
I would suggest that 256-512mb would probably be fine, and still give you a bit of room to move.

My site normally has about 40+ members at anyone time using the forums and become to much for shared hosting.
I got a VPS with PowerVPS, their Cpanel Power 1 plan and so far had no problems. Have only been with them about a month so can't really comment to much but so far they have been excellent and support is great, tickets normally answered within 10 mins no matter what time of the day.
