The reply-to address is correct (we use our own domain name), but it is the display address that always shows the gmail address...
Can this be changed?
I'm assuming this is happening because the mail is sent through the gmail server.. and there must be some way they are automatically replacing our own display name with the actualy gmail username?

No, this can not be changed. For security (so users are not able to forge From: headers) and advertising reasons your actualy GMail address will always be displayed.
The reply-to field is an addition to your headers, not a replacement. It will still show your mail as being from your e-mail address, but when people click reply it will enter the address you have set instead of your GMail one.
