The ones from that list most compatible with cPanel are CentOS 3 and Redhat Enterprise 3. As for which is the most secure, you should speak to your server admin about that as any of them can be totally secure or insecure depending on who is managing it. As for the easiest to manage, again you should speak to you admin and see which one they (or you) find easier.

am changin because one malicious user made some attack on our servers using php (i guess) cause we found the file phpshell.php then some ./dat directories with programas like eggdrop and such so we feel our system is compromised.
We are going to a new box, secure it as much as we can with php as safe mode, the mod_user_dir settings on apache, suexec on php, then put all the accounts there... and give our best hopes to that new one :$
