A server we're considering comes with centOS. There is an option to have Red Hat Linux Enterpise 3 installed for an extra $30/month. Is there any real major differences between the two? Would Red Hat be worth the extra $30 bucks per month?

All you're basically paying for with RHEL3 is a support department and a software company to get updates from. CentOS is the best Linux OS I have ever used on a server platform. It's secure and reliable enough for business use (Community ENTerprise Operating System), and easy enough for personal use.
