I am in the process of starting a web hosting company. But I have one problem, what harddrive configuration should I use. My current specs are Dual Xeon 2.4 / 2gb ram / 2x74 gb SCSI. Can someone explain RAID in detail and recommend hd space/configuration.

Raid can be used for data reduncy or performance, or both for that matter. There are different levels of raid, the two most important ones are 0 and 1. Raid0 stripes data accross multiple drives, this give a huge performance increase as its like using 2 harddrives as 1. In some cases you could see up to twice the read performance.
Raid1 allows you to mirror data. So everything written to the primary drive gets on the secondary as well. This is great if the first one crashes the second still works and you don't lose data.
Raid1 is probally a good idea, although you will still need remote backups in place as well. Generally speaking 74GB is plenty of diskspace for 1 server.
