I went to WHM -> Update config and setted:
cPanel/WHM Updates: Manual Updates Only (RELEASE tree)
cPanel Package Updates: Manual Updates Only
Security Package Updates: Manual Updates Only

but I'm getting cron messages of upcp running

is that correct (because the last one checked)?

This is correct, because upcp do not only update work it check some othe security things
