Zend

When installing Zend 2.5 onto a server which already has Zend 2.1, does it automatically upgrade rather than have two installs of Zend ?

Yes it "should" upgrade. It's not possible to have ZO 2.1 and 2.5 running at the same time, so if the upgrade fails you will know about it.
