Anyone knows how i can do this..?

There is a php selector which i not want to install, its not needed and break many things

Are you sure VestaCP comes with PHP 7.4 by default? That seems like an odd thing for them to do given that it's only in RC and the PHP team specifically say "Please DO NOT use this version in production, it is an early test version".

Could 7.4 have got installed another way?

Have you given it a reboot? Have you restarted any of the services after making changes? Can you provide more information?
