My IP was listed in SPEWS (not my fault, came that way), so my provider gave me a new one, and has changed the main IP address of my server to the new one. My question is - How do I verify that this is changed? In cpanel / whm, the main IP is listed as the old one.

Is there a tool that I can use to find the IP address of my mail server (I don't want any more of my email to bounce, due to blacklisted IP addresses).

At a root prompt: ifconfig | more

Read the eth0 block of text, it should have "inet addr:". That's your servers main IP.

eth0 shows as the new address
eth0:0 - 2 show as old IP addresses.

I assume that all email will be sent from the eth0 address, but cpanel, and the main virtual IP will stay with my old IP (currently eth0:0
