Open source backup tools for LAN backups
Has anybody tried some of this?

We would like to setup a backup system for a customer LAN network that is mostly Windows PCs + 3 Macs.
For this purpose we bought a cheap NAS and also have a proxmox server where we could virtualize Linux
we think that we could setup a backup controller as a VM and store the files in the NAS.
But what software should I use for that?

Have you taken a look at owncloud? It is not a backup per-se but it does keep a history and depending on your specific situation may work well for you.

I would like to backup the information of the client desktops of our LAN
to a physical NAS using some kind backup agent as you can see on this picture

BTW I would like to have some kind of backup director that could alert me when some backup job fails.
I have just received a newsletter from VEEAM, where they anounce a free backup agent for desktops. I looks nice
however it seems that it doesn´t have a backup director and also doesn´t have a Mac agent.

Looking at the image, you seem to have VM backup, but you have still not specified what information this will be? Do you want to take backup of some application. Images shows SQL server in it. Do you want to take DB backups to start with. Can you be more specific with exactly what this information will be that you want to backup, then I can suggest you on this appropriately.

I am looking a product similar to this free veeam product

but with a centralized management console that I could use to identify issue in the backup process.
As I currently have a NAS, I would like to use it to store backuped files.
