Virtualmin is not easy to use for newbies. Their naming conventions, design and functionality are geared more towards system admins.
Example, there is no Email Account.
You need to go to Edit Users > Add a new user, select type POP3. Then, login using user.domain instead of [email protected] .
I wouldn't really say you need a degree in computer science to actually use Virtualmin I think that cPanel has just changed the market and turned everything into "point and click" type setups now when something isn't point and click and actually requires a little bit of knowledge people are either lost or simply claim "you need to be a sysadmin to use it" either are incorrect.
You can also edit the username within the template configuration for "Mail for domain"
System settings > server templates > default settings > mail for domain
