VDS/VPS vs Dedicated server
I found this VDS
Eight core: Eight full, dedicated HT CPU cores
•8192 MB of RAM
800 GB of hard drive space
8000 GB of bandwidth transfer
should I choose that over a dedicated server with little more then half that?
Game servers will be running on the machine, on the vds do others have access to files/resources/bandwidth etc...?
Should I ask the seller if the dedicated server(where the vds is hosted) is shared?

There are too many factors that you have not listed here that would be required for someone to recommend one or the other. Price, bandwidth mix, majority user location, provider reputation, etc etc etc.
In my humble opinion, if your computing needs require 8GB of memory and 25megabits of bandwidth (8TB per month traffic is roughly 25 megabits per second), you're in the dedicated server market, not VPS market.
Also, expect to pay handsomely for 16 virtual cores, shy of a TB of diskspace, and dedicated 25Mbps BW.

How much are you paying for that setup? A dedicated server like that will run you $300 - $400 a month, minimum. Also, what data center are they in?

Make sure you check Game-Servers are allowed, there CPU hungry and i see plenty of people get suspended for hosting them because they haven't checked the TOS/AUP

advantages:
Price - you wont get a dedi with those specs for that price
Disks - Its likely that the VPS node has better performing disks than a dedi you could get for that price
CPU - you will get a lot of bang for your buck.
Disadvantages
Price - You could get a lower spec dedi for the same price with fully dedicated resources that may do better as a result
Disks - You dont know how many VPS are on the node so even with a (possibly) superior raid array you may have disk lag
CPU - again it is shared so if they are not FULLY dedicated cores (they wont be even if it says so its just clever/sales wording) other VPS's may impact CPU time and you may get booted for hogging resources
This is from the perspective of going for the VPS over a dedi box.
Location is VERY important for gaming as high latency e.g. your clients are in west coast USA and the server is in the UK then its going to be unusable as a game server

if it;s nfo (based on what i'm guessing) i'd probably go with that over a half spec dedi

If it sounds too good to be true....
If you really honestly had 8 cpu cores with that, why is it not a dedicated server in the first place? How many other people on that server also have 8 "dedicated" cores? How many cores does the server really have in the first place? If the price is low, I wouldn't trust it, and if the price is high, you'd be better off with a dedicated.
