Switched to a Macbook Pro 15 in December and never looked back, OSX for lappy/desktop, and CentOS 64-bit for servers. I _guess_ we can also mention Win2K8 since we use it occasionally.

Microsoft free for about 10 years. Kubuntu Natty for desktop, Xubuntu Lucid for media/file server, CentOS for servers.

Windows 7, Home Premium at home is generally fine. Pro or Enterprise for work on desktops/laptops/VDI.
I would need to reboot XP a minimum of once per week. The only time 7 reboots is on patch Tuesday.0

At home I love Ubuntu, it's amazing, I have it installed on a separate partition, but I don't get to use it that often, as a lot of my software is Windows only and I have a hard time fiddling with Wine, and it takes too much time to switch between the two and so on. So I spend much of my days on Windows 7.

My favorite OS for personal use is Windows 7.
But regarding a server OS I'd really be thinking about some stuffs. Depending on what I'd want on the server I'd choose between couple of OS' Top 2 would be CentOS and Ubuntu.0
