I have a dedicated server (in US) running Linux, and I was wandering if I could use this server as a VPN or proxy to access content from Hulu and similar sites from outside the USA (for personal use only).
Is this possible, and if yes, how to I go about it?
Could using a VPN create any server load or other issues on my server? Would there be any benefit in paying to get a VPN service instead of using my own server?
I highly recommend using your own.
For quick use PPTP is recommended (quick set-up and easy to use no configuration needed really) and it would suite your needs as your only going to be streaming Hulu you don't need the advantages that OpenVPN offers (like encryption)
In terms of server load, it won't really effect it, the main constraint is bandwidth and that won't be anything to worry about considering your only going to be streaming video which would push 1-3mb/s at maximum.

I've read a bit about PPTP vs openvpn. When they say that openvpn is more secure, do they mean about the client, or about the server as well (i.e would I increase the chances of my server being hacked if I install PPTP on it?)
If server security is not an issue then maybe I will go with PPTP which as you say is easier to install and from what I understand is easier to use with mobile devices.
I will need the VPN to access things like Hulu, and every now and then use it from my laptop or ipad when using public wifi to increase my security a bit.

OpenVPN is very easy to set up on a server. No user/password auth needed if you use OpenSSL certificates. Follow the HOWTO.
You will need to enable NAT in iptables for the VPN network.
You need a lot of bandwidth on your server to watch Hulu streaming videos over VPN. The problem with OpenVPN, IMHO, is that it's pretty slow. PPTP ain't much better. A lot of the problem has to do with latency and routing--good bandwidth costs good money. Where is your dedicated server hosted?
