1and1 has $4.99 .com, .net, and .org until 2/28/2011
The domain privacy is included but it acts weird. It won't ask you to for private during the registration but days later, you add it via Contact then click on Public/Private Registration. Sometimes you will get an error message (1and1 knows about this and is fixing it) and sometimes it'll go through. The fix is logging out, waiting 15 minutes or an hour, then trying it again.
Buy the domains and point them to your servers

Change nameservers to the ones you use

This question has been ask about a zillion times. Please research these forums before asking such a broad question. You need to be specific about what you expect from a registrar. Otherwise you will get recommendations for cheap, expensive, good/bad/indifferent support/interface/services, resellers/non-resellers, us/overseas, etc. It is hopeless (and a waste of time) to answer such a broad question without knowing your requirements.
