Server for Minecraft
Which would you recommend? Thinking between Xeon e3-1270V3, or the new E5-1650V2. Both the same clockspeed, with the 1650V2 having 6 cores vs. the 1270's 4 cores.
Minecraft can only run on one core per each server, so we need high clockspeed. The reason we're thinking of the 1650v2 is because we may need more than 32 GB RAM. We already have a server with 16 GB RAM that almost uses all of the RAM. The CPU is constantly at about 25% or so, which of course isn't bad, but the memory is what we're worried about.

If the cost is the same, go for the 1650 simply because you can upgrade it with more RAM down the road.

I'm actually using both to host Minecraft servers right now, except one of them is a 1270v2.
Both use SSDs and both are handling the servers very well. However the 1650v2 can get laggy at times as it is currently hosting about 110 GB of servers. During peak hours I notice that it isn't handling the load at an ideal performance level (probably I/O and not CPU). The 1270v2 has rock solid performance at all times and never lags.

For E5-1650v2 we use 2 480 GB SSD in RAID 1
For E3-1270v2 we use 2 120 GB SSD in RAID 1
RAID 5 or 10 might help handle the big player surges.
