Which would be better? Managed VPS or self-hosted VPS?

I am wanting to upgrade my VPS, but I do not wish to pay more. I have a 1GB RAM managed VPS at the moment, but I am quickly outgrowing it. It is a fully managed, OpenVZ, cPanel VPS.
I have two 16GB dedicated servers as well, w/ SolusVM and Xen on it. I host a few VPSs for friends and a few clients, and myself. I have a lot of free memory on the nodes that I could use for a VPS for my websites. I was thinking of making a VPS w/ 8GB RAM and using that for my sites....one of my sites is getting 25,000 hits per day, and my other sites are growing quickly.
The only thing I am concerned about is security. If I install: cPanel, MySQL, nginx, and the other basics, should I be too concerned about security if I make sure everything is up to date? What would you all recommend I do to ensure I am secured to the fullest extent?
Right now, here's my plan, if security isn't too much of an issue...:
1. Buy a cPanel license from BuycPanel
2. Setup an 8GB Xen PV CentOS 64 bit VPS (I am expecting a huge amount of traffic in the coming weeks with a large forum launching.)
3. Install cPanel, the basics, etc...
4. Setup the name servers
5. Transfer everything over
6. See how things go. If it doesn't work out, I will go back to my old provider. If it does, then at the end of this billing period I will request cancellation w/ them.
Does this sound like an ok process? What would you do if you were me?
I am not concerned about management though, I have a good bit of experience with CentOS and servers in general, it's just the security aspect that I am greatly concerned about.

Managed VPS = Control/accessible by others or your host.
self-hosted VPS = you control everything, save $$

I'd do the same except replace cPanel with Virtualmin/ISPConfig. IMHO, a paid control panel is overkill to run your own sites unless you also wish to provide hosting services.
Others might want to chime in on the security aspects, but having a strong password and doing regular updates would keep you safe for most parts. Of course others will tell you to setup port knocking, install firewalls and the sort, but basic security practices does go a surprisingly long way in keeping your server safe.

Yes. Csf is really great. Do donate to them to keep them going too. =] using csf on all my servers

If you are familiar with VPS configuration, you can choose unmanaged plan. If happen that you need the technical assistant to troubleshoot your server then only pay for the service. Otherwise, you can manage your own server.

Security is a good thing to be concerned about, that is for sure!
If I understand this correctly, you'll take 8gb on your own dedicated servers for your new VPS right? If so, perhaps throw a hardware firewall in front of your hardware node and reduce the load on your cPanel server by NOT running CSF. CSF is wonderful but you'd find a little more control with a hardware firewall, but then again, if you don't know what you are doing to configure it - might not be a good idea.

self-hosted vps is better but it needs more inputs.
