Be careful if you are doing anything mission critical. I used a $30/mo company before, and it ended up turning bad. They may also charge a lot for support to make up for the low cost in hosting.

that's not really the case where I work, we just use the lower end stuff to help pay bills. Those servers are still on the same lines that the $500/month servers are on ...

It may be possible. But usually something's got to give. You may also want to do some maths. The cheapest a desktop variant can go is probably 350-400 to build for a celeron. That means just on the hardware it takes 6-8 months to recover the cost.... mmm.
