I wasnt sure where to post this, but since this is for my small hosting business and for business use i though I would post it here :).
My question is whether its possible to run exchange server from within vmware fusion for mac.
Has anyone ever done this?

I don't see why not, but do expect it to be quite a memory hog.
You will need to allocate at least 2GB to the VM, 4GB would be preferred.

Plus Exchange will only setup in a Windows Server environment. Make sure your Fusion has support for this kind of OS (not Windows desktop versions like Vista or 7 or XP)

vmware fusion supports windows server environments. Im currently running Server 2008, i still need to install service pack 2, before i can install exchange.

The virtual server will be dead slow when running Windows 2008 & Exchange with 2GB for sure.
