I usually just buy from a registrar, but I've read that people have domains for sale etc, but: how do you actually go about selling them? Do you just say it's for sale, or what other steps must one take to making sure it's done correctly when buying & selling to someone? Thanks in advance :)

Very much like used cars, there is a second-hand market for domain names. There used to be some places where poeple list their names for sale (like GreatDomains.com or AfterNIC.com), but many of them are closing down, sadly. Some people put up signs on their lawns ... hmm, their home pages; some even run websites dedicated solely to selling their names.

yes, I kinda figured that much :) but I meant more along the lines of what would someone have to do to transfer the domain over? what would be safe methods of paying/buying these sort of domains? stuff like that

Well, I bought one directly from someone by executing a contract to purchase, sending the money, and then they did a change of registrant with the registrar. Boom! The domain is mine.
