If I want to move my website from one host to another (from Lunarpages in my case) what kind of a backup do I need to download : a full account backup ? or a home directory backup can be enough ? How can exclude some directories and files from the backup in case are not needed ? using CPanel .

If you only want your home directory, a home directory backup is fine. If you have things like databases, emails, etc. that you want to keep, a full backup might be better. Full backups include everything that a home directory backup includes as well as other things like settings, emails, databases, etc.. So, when in doubt, get a full backup :)
cPanel includes all files in the backup, you can't choose to exclude directory and files from it.

Get the full backup. Basically all those are needed when you need to restore.

Hello,
I recommend taking a full cPanel backup. You can always delete/remove anything you don't need once your account has been restored on your new host. I recommend keeping your account until your website has been successfully restored with the new host as cPanel backups can go wrong sometimes. Another good thing to do is download all of your files with an FTP client such as FileZilla and backup an databases you may have with phpMyAdmin just to be on the safe side.

Always do a full backup when moving servers with Cpanel. Some hosting companies will even move it for you if you give them your current username/password.
The ability to do this is built into Cpanel but requires reseller or admin privledges, which is why your host will do it for you.

Get a full backup using CPanel feature it is easy and reliable.

There are some trade off, if you have enough space then it is better to keep full file system backup. But if you don't, you should use the cpanel backup instead. But you have to keep in mind, it is going to take more CPU to generate and generating higher volume of accounts using the cpanel backup is tough.

Does the full backup ( or the home backup) made by the CPanel maintain the file permitions when moving to another host or some may change ?

Yes, the file permissions will be maintained.

Yes, as long as you are using the cpanel restore functionality to restore it, if you use local tools to untar then it will be owned by the person who extracted it.

Definitely do a Full Backup.
Also it's best to get the host to transfer the account for you as they can transfer the data over much faster.
If you have an account of 1GB-50GB+ of data it could take you days to download it to your PC/re-upload it to your new host.
Your host could transfer 1GB-50GB+ in minutes/hours.
