Although I have never used postfix or exim, I can suggest using qmail with full confidence. The company I work for uses it on servers with thousands upon thousands of POP accounts and it handles the load like a day at the beach. qmail is certainly one you want to investigate.

All are good.
qmail is very good at smtp and secure, but it is not very kind to the receiving server on large lists
postfix is equally light and secure and probably a wee bit faster in delivery
exim is nice but wont be my first choice :) but then it's just me!

I have been told that qmail is faster than postfix or exim. Qmail is also more popular. Not sure how one would evaluate security but postfix may have slightly more emphasis. All three are excellent.
And then of course there's always Kerio and VOPmail for larger needs.
