SolusVM actually does a good job with documentation and the forums are quite active.
Here is a wiki page that provides you with system requirements and overview of how to install with Xen support: http://wiki.solusvm.com/index.php/Xen_Virtualization#Server_Requirements
General Installation document: http://wiki.solusvm.com/index.php/Install.
There are quite a few differences between HyperVM and SolusVM. In my opinion there are still quite a few features in HyperVM that has not yet been worked into some of the recent control panels but the #1 benefit you will have with going with a control panel like SolusVM is the active development team and support.
HyperVM among other things does not currently have an active development cycle and as a result you are likely to have a very hard time getting support for questions such as these or application bugs.

SolusVM makes it very easy to enable the TUN module needed for VPN pptp support to function for tools such as openvpn. You or your clients can do this right from their control panel.
If you will be selling services to clients then I recommend SolusVM given its interface and plug-in with a billing system such as WHMCS. The control panel also simplifies the aspect of applying resource limits, etc.
I would not recommend HyperVM for Xen given the reasons I gave earlier.
However, if you will be using this for personal use then you can look at Citrix XenServer but there is no GUI for this one so you you will need to evaluate your usage scenarios.

HyperVM and SolusVM are management frontends for OpenVZ and Xen, they do not distribute or have any effect on the way in which Xen is setup.
They can automatically install Xen but they will just install Xen from your OS's repositories with default settings.
Xen will work with VPN's out of the box, you can load any kernel modules that you don't already have.

Solusvm offers a 15 day trial so give it a try. You only need one computer to run everything. I have been using Solusvm for 2 to 3 months now and I am very happy with it. I moved over from Hypervm. I have had no problems. If you have any question about it ask on there forum. They normally have a quick response.
