I need a cable modulator (a.k.a. RF modulator) that can take S-Video or Composite video (and audio of course) as an input and modulate it to a channel OTHER THAN 3 OR 4.
So far all the modulators I've seen only go to 3 or 4.
Anybody got product links?

The only way I know how to get a RF modulator to use a different channel is to either modify one you already have, or to purchase one used by studios (really pricey too).
Try these companies and look under "video production".
Panasonic
Sony
Akia
Sima
Midwest Communications (I had a 3000 page catalog of broadcasting equipment)
Anyways, I made a "Sega Gensis" RF modulator use channel 7 once.
Do modify it, you'll need to be comfortable working with live voltage and exposed parts. A typical (consumer) RF modulator only uses some 3 to 12 volts (depending on what it is). Anyways, in *most* RF modulators there is an adjustable "coil" than can be tuned like a variable resistor. Sometimes there are more than 2 so you'll have to experiment. you should study the "setting" of the coil in case if it doesnt work, you can restore it back. I'f you're lucky you'll be able to get this done in a few mins or may end up messing with it for a few hours.
Be warned that doing this violates FCC rules if you live in the USA, so you're responsible for any interferrence you may create.
Also note that if you do this, the frequency it will be working on is beyond its standard operating range, and this will most likely cause it to have a shorter life expectancy.
I used to know the frequency for channels used in the NTSC format, but you can prolly google around for the actual frequency and hook up an nscilloscope to help find the right frequency.

I don't feel like ripping one apart (or voiding the warantee) so I'll look for those companies' modulators. I don't want to spend more than $200 though :)
