If I have a domain at name.com with domain privacy, and a web host somewhere else, and I put in the hosting's nameserver adresses at name.com's domain settings, than the whois informations will still be private, or whois will use the informations from the web host?

Domain whois only relates to the domain details,
it will show the nameserver details, ie ns1.webhost.com etc.
Some cleverer people might expand on that, but it's the basics, as I understand it.

Whois settings are set at registrar level, as long as you keep the registrar the same, without a transfer, whois will remain enabled.

I think the domain register details will stay private, but any name server updates will show as these are logged as they happen.
