I have a domain and the dns is pointing to my web host but I have got my own name servers, could I change the name servers on my domain to my own name servers instead of my web hosts, I have setup the name servers to point to servers ip, will it work if I change it or not?

You can ask the host for a dedicated ip and they will give you your own to add as nameservers. not really needed unless your a reseller of some form

It will work, though it will cause DNS mismatch issues.

Your best bet is to consult your current hosting provider.

Hosting providers provide with while labelled ie Anonymous Name Servers as wells as private labelled Name Servers. Some service providers do charge you extra for private labelled Name Servers. The best way is to approach your current hosting provider and enquire about the same.

You can configure two nameservers two dedicated Ips.

As long as you have a valid zone file for your domains ON your own name servers, yes, it will work.
