As far as a free control panel goes, which one is generally preferred (for single domain on a dedicated server) :

Webmin or Plesk ?

Having worked with both control panels, taking the "Free" one domain on one server option from Plesk seems like the best choice. ;)

Both control panels are very different, webmin has a ton more features but is harder to use, plesk is very easy to use but is somewhat limited in features, the nice thing about plesk is that when you install it it sets up all the services and software for you where is if you get webmin youll have to setup everything manually.

why not both: Plesk for the ''Newbie''-Work (DNS-Config, Open Domain-Account on Server, etc.) and WebMin for the Advanced-Work (Update Packages, Majordomo-Administration, MySQL Backup, etc.).
