I've all but decided to use rackspace.com for our dedicated server solution, but recently happened upon the New York Internet Company:

I know already their support isn't 24/7, but are they worth considering over rackspace? Any advice/suggestions welcome.

The "40GB bandwidth" is based on a fixed 128 kbps line. A 128 kbps burstable connection (billed at 90%) is $75/month more, making it at least $215/month.
There are several other providers out there that offer better packages for lower prices... Try http://www.wbcom.net/ for instance.

You can build a single U server with better specs than that for about a thousand bucks. Then just pay for colocation. Crunch the numbers.. the box will pay for itself in 6-8 months time.

What happens if you get a hardware breakdown? WHat host would you recommend for co-lo?

Well, you have a couple of options concerning hardware breakdown.
1) Buy good stuff and take your chances (The hardware is warranted for 3 years, of course you want to avoid that altogether.)
2) Buy your equipment with a Rapid Replacement warranty (Immediate overnight cross-shipment of a complete system to replace it.)
3) By a couple of 1/2 U systems and mirror them in a 1U space. See flic below.
As far as recommending Hosts..... I've been eating my words with a snow shovel lately, so I'll reserve judgement. :D
