Latley I've been recieving around 30-40 spam mails a day coming through my e-mail account and I would like to know if there's anything I can install on my server (Dedicated RH 7.2) to stop spam mail before it reaches me as it's taking ages to download it all.

You should take a good look at Spamassassin, which can do just as you want.

Another vote for Spamassassin. In addition to that, you might want to consider setting up RBL checking on your mail server. Either MAPS RBL (http://www.ordb.org/) or ORDB (http://www.ordb.org/).

Well, I'm in no way an expert, so I would say it's fairly easy: I did it...
Just follow the instructions: http://spamassassin.org/dist/INSTALL
While on the topic, does anyone know of a way to stop mail from a specific domain from going to any of the sites on a specific server? I'm using exim if that helps.

Spamassassin rules (and isnt that hard to setup) but a good temp solutions is consider them adding them your your personal blacklist and or hosts.deny file.
