If the cat is only selecting the best beans, rather than the general 'anything goes' beans most coffees have then you'd get a great cup'o'joe. Treated properly, a coffee bean that's passed through the nether regions of a cat isn't really any worse than eating a pig's flesh, sheeps brain, cow's liver, or the myriad of other things humans eat without giving much thought too. :) As long as my coffee doesn't have a hairball in it I say it's all good.
