I'm doing some research into payment gateways and merchant accounts and have a query. Please redirect me to other threads if this has been covered already.

What's the lag time between a customer entering their payment details into the gateway and the money being available in the Business account? Am I looking at several, days, hours, minutes, seconds or does it depend on the merchant account/gateway.

It depends on the arrangment you have with your merchant account provider and bank. (Sometimes they are the same.)

Most merchant accounts have a 48 hour timeframe, but if you are trusted you can ask them to switch to 24 hours. (ie: If you have used them for a long time, have a high credit rating, low-risk products, etc...)
