I am assuming that when you say "virtual server" that you mean a virtual dedicated server where you get your own root access, but share the physical hardware with other customers who also have their own separate root access.
I could right a book while trying to answer your questions, so I'll try to be useful in my response without resorting to writing that book (I might be able to sell it though:D ).
How many sites or data transfer can a virtual server handel.
This depends entirely on the specs of the hardware. A good multiprocessor system (at least dual PIII 1.4GHz) with 2GB of RAM could probably handle around 500 virtual dedicated server provided your software is setup properly and they are lightly loaded. Don't forget the 2nd most important component (after RAM) of a heavily used server - the SCSI disk subsystem.
As far as data transfer, that is entirely dependent on the makeup of the usage. Heavy CGI or other scripting will bog down a CPU before you reach any transfer limits. On the flip side, a good system can put out 400Mbit/sec of bandwidth usage if it's just transferring files via FTP.

Depends 100% on your usage. If light to moderately loaded, you'd probably never know the difference. Heavily loaded, you'd probably notice.

Virtual dedicated servers? Nope. Leave out Windows and that becomes a yes. I've heard some people actually run Linux on top of Windows, so that's a valid combination, though I wouldn't trust its reliability.

FreeVSD isn't a control panel and I'd be surprised if you could get a control panel running on it. Plesk is currently my favorite control panel, but that topic has been discussed at length in hundreds of threads all over these forums.

Freevsd comes with a control panel(seperate install) acuall pretty cool when you finally get it working. Dont expect it to replace plesk though :)
