I was wondering if it is possible to change the order in which posts appear when someone clicks on a category. By default it displays the last post that was written first. This does not achieve what i want organizationally(especially when listing a post in 2 categories) for the type of video blog i am attempting to create.

You need to go into the template and change the template tags. If you go to wordpress.org and then to their documents and search for template tags. They will list all of the different parameters you can change/add to make wordpress do what you want. It's very versatile.
