What would you like to see in a host's support section i.e setting up a email client etc

The more content the better. I see a support area as an organic thing, something that you can build on over time. You will quickly find out which parts are missing (they'll be the ones all your clients email you about). Just add them as they come in, then that way you have an ever growing list of issues as a quick reference point for your clients.
The bigger it is, the less they will need to come to you for advice.

Look at CPanel. I think they've got pretty much everything in their cp
