Apologies for the newbie question, but I can't find an answer easily... Is it a given that a dedicated server includes
- root access
- right to open user accounts (presumably with SSH access)
- running your own DNS server
- running your own servers (not necessarily http(s))

In other words, once you've signed up, is the machine yours ? Or are you chrooted somewhere with limited configuration access ?

None of the vendors I've checked don't have any details about their packages on their websites (beyond the basic hardware/software/bandwidth facts)

Once you buy a dedicated server, it is all yours. You have root access and can basically do anything. Of course, you will need to follow your providor's AUP, which may state something like no IRC, porn, warez, etc...

The machine is yours to use as you see fit. (within the limits of the terms of service, of course) You aren't chrooted. :)

You are correct. Also, your server provider should offer Primary and Secondary DNS services for you. You can setup your own nameserver, of course, but they should be there for you if you want them.

But the best thing to do is to ask the provider that you're thinking about choosing. Every provider is different.
